There have to be a lot of candidates for the healthiest dish, but for me, I would put forward humous.
Crushed raw garlic, lemon juice, sesame oil, virgin olive oil, cooked chick peas and a pinch of rock salt.
Served with some coriander leaves and slices of raw vegetables. Great with tomatoes and wholewheat bread.
Sesame oil has wonderful properties as an anti bacterial, anti-inflammatory agent see here - http://tiny.cc/OkIIy
Garlic and olive oil we all know about.
Chick peas are high in protein and also supply zinc and folate (B9)
Rock salt for essential minerals.
Here's my recipe:
Into a mixing jug, blend
one fat garlic tooth or two or three small ones depending on taste peeled and crushed,
three soup spoons of fresh lemon juice,
two soup spoons of sesame oil
six soup spoons of virgin olive oil,
and a pinch of rock salt.
Then add a jar of drained and properly rinsed (until drain water is pure and without any foam - very important) cooked chick peas (about 400 gms)
and blend all together.
Keep in a container with a lid. Eat quickly; not that you'll be able to stop yourself from finishing it off.
